I am loving my culinary creativity these days. I really am so thankful for blogging and the people I’ve met. I really would not be cooking if it weren’t for the motivation of others and the awesome world of blogging. My husband was gone all week so I wanted to fix him something nice at home that he’d like. I asked him what he was up for and he said maybe pasta and meatballs. So…I grabbed the turkey meatballs from Trader Joe’s that he was talking about. I didn’t want the normal tomato sauce I really wanted a a little sweetness. I had leftover sauce from my pulled pork sandwiches and the onions too. But I was thinking rice might match a little better then pasta. So I cooked up some rice, and poured the sauce on the meatballs and let them simmer for 20 minutes. Then topped the rice with the meatballs and the pickled onions. It was super tasty. I put it in a bowl and it was such a comfort food meal. I am so happy to have my Hubster back home and wanted to let him know that.
